Eating real food is important to us. I have personally avoided living with daily medication by following the SCDiet and eating locally and sustainably is a powerful way to seek the welfare of the communities that surround you.
In fact, eating real food on the go fuels delight as well as our health. It forces us to slow down, smell the smells, see the sights, and practice self-care.
Eating real food while camping does take more pre-planning, but its benefits are absolutely worth it. With just a couple tricks up your sleeve, fellow campers will be trying to figure out how you pulled off a gourmet meal.
The trick for us was that we wanted our packed meals to be light enough to carry during our hour-or-so walk.
PALEO CAMPING PANCAKES
1 1/4 c almond flour
1/4 t baking soda
1/4 t salt
Put into a compostable zip bag
3 T butter + more for cooking
Put into separate jars
4 T honey
Pack in a squeeze bottle
1 T cinnamon (optional)
Pour the dry ingredients into a jar (I used the one I had brought the eggs in)
Crack in the eggs and stir until fully blended
Melt 1 T of butter and mix it in
Add the honey
Cook on a pan using the rest of the butter
Eat them as they come to enjoy them hot
Top with any extra butter, a drizzle of leftover honey, and a sprinkle of cinnamon.
