With thick frost wrapping all the tree branches each night and sharp wind coming off of Eliot Bay most of the day, winter has come to Seattle. The coldest days tend to come in January despite the clear, cutting sunshine that generally persists throughout the month. Now is the time for hot chocolate.
It was around this time last year that I began searching for a recipe that I could use and I found just what I was looking for at Girl Meets Nourishment. Sadly, that blog no longer exists. Happily, I snagged and modified the recipe before it disappeared.
An exciting edition for this year is melting in a few chocolate honey mints before pouring it into the mugs. It is also fantastic with a few drops of peppermint extract instead. It's perfect for those who don't like the coconut flavor as much.
recipe modified from Girl Meets Nourishment
makes 2 mugs of cocoa
2 c coconut milk (1 can)
heat in sauce pan on medium low.
2 T cocoa powder 2 T honey 1 t vanilla extract
in a small bowl, mix into a smooth syrup
whisk the syrup into the milk and warm to desired temperature.
pour into mugs, cozy up, and enjoy.
